Here are the books I finished reading during the month of February 2012…

 

FISH!:  Stephen C. Kudin, Ph.D, Harry Paul and John Christensen

I LOVED this quick read! Now, I really do mean quick…I read it in a little over and hour while the kids and hubby played at Chuck-e-cheese…I sat in a booth and read!

Although the book is aimed at boosting morale in the work place, I personally found it inspiring on a personal level and could easily see implementing this parable on a family/household level.

Food Rules: Micheal Pollan

Another Quick read! I picked this book up at the thrift store for 25¢ (total BARGAIN!) a while back and finally got around to reading it. I’ve seen a number of reviews for Pollen’s other books and was eager to see what I thought. The author has outlined 67 various “food rules” and gives a brief explanation as to why this is an essential ”food rule.”  Again this was a quick read, worth reading if you’re setting out to change your eating habits (for the better). I enjoyed it but it wasn’t life changing as our family already supports the rules he’s outlined.

Juice Juice Baby

What you need...

  • Large bunch of fresh KALE, washed and center stem removed
  • 4 stalks of CELERY
  • 4 Jumbo CARROTS
  • 1 small APPLE
  • 1/2 large CUCUMBER
  • small chunk of GINGER

How to...

  • Push through your juice and ENJOY!

Today I…

(a reminder to myself, for the ugly days, that I am capable of much)

 

  • Woke up to find these two lovelies snuggling

  • Took the day off from “schooling”
  • Washed, dried, folded AND ACTUALLY put away eight loads of laundry
  • Changed out the sheets
  • Vacuumed the house
  • Swept the hard floors
  • Cleaned the bathrooms top-to-bottom
  • Paid bills and stayed on top of budget
  • Ironed 10 shirt
  • Watched Hook with kiddos
  • Enjoyed a fresh (green/carrot) JUICE
  • Watched Alabama Moon with kiddos
  • Listened to Jack and Annie adventure through the Jungle
  • Talked about Presidents
  • Sat in a car dealership parking lot for 45 minutes while the Mister negotiated
  • Waded in a sea of people ala Costco (eggs and BOB books)
  • Finally made hair appointments for J and myself
  • Loaded and unloaded the dishwasher with J’s help
  • Took out the garbage and recycling
  • Felt the fresh snowflakes on my tongue
  • Realized I am going blind
  • Helped J finish Birthday Thank-You’s
  • Made a yummy dinner
  • Planned a “kid-friendly” Vegas Getaway!
  • Took a relaxing bath
  • Headed to bed…Early!

 

Meal Plan for this Week

I have a love/hate relationship with meal plans…however I’m always in need of accountability and I get that with a weekly meal plan. I know if I don’t plan to fix meals, the time gets away and we’re scrambling come eating time! I keep our meal plan simple for each week with 7 breakfasts, 7 lunches and 7 dinners in mind. I don’t specifically assign meals to days so we’re still flexible. Each Sunday I make a list of the potential meals for the week and keep it posted on the fridge.

Breakfast
“Green” smoothies x2
Bacon, Scrambled eggs
German Pancakes w/ fruit
Pancakes x2 w/ eggs or fruit
Crockpot Amaranth (I’ll double the water and set crockpot on low overnight)

Lunch
“No Crust” Salmon Quiche (or salmon pizza as my kids call it)
Green Sandwiches x2 w/ fruit & veggies
Leftovers x3
Homemade Tomato Soup w/ veggies

Dinner
Coconut flour battered Elk Steak, pan fried yellow squash & kale
Chicken soup, Almond flour scones
Elk Burger, Baked reds w/ parsley
Spaghetti sqaush spaghetti
Lemon chicken, Jerusalem artichokes (will be modifying this recipe)
Leftovers
Sunday Elk Roast

To make (in large batches) this week
Granola Bars
Buckwheat Banana Bread
Homemade Chocolate Chips
Green sandwich rounds

Our family eats Grain, Dairy Free and refined/cane sugar free so all our cooking is modified to be so. We’re limiting our potato consumption to once per week.

Pancake Recipe (Gluten/Grain free)

Our family eats a modified GAPS diet, similar to Primal/Paleo and this is one of our favorite pancake recipes, it’s quick, easy and we always have the ingredients on hand. Last fall we canned about 25 quarts of pear sauce and this is a great way to make use.The cinnamon and nutmeg added to our pearsauce gives the pancakes automatic flavor and natural sweetness.

This recipe is gluten free and grain free as well, we’ve used our favorite flour… coconut flour!

Easy Pancakes (Gluten/Grain free)

What you need...

  • 4 eggs (organic and/or pastured if possible)
  • 1/4 cup Coconut flour
  • 1/2 cup Pear sauce or Applesauce (we use homemade)
  • choice of oil for cooking (we like coconut oil)

How to...

  • Combine all ingredients in mixing bowl and whisk together, let batter sit 5 minutes and mix again.
  • Heat oil in pan (or plug in electric skillet).
  • Drop batter by spoonfuls (or for larger cakes use 1/4 cup) onto skillet and cook appx 2 minutes per side.
  • Serve with your choice of raw honey, yogurt and berries or pure maple syrup.
  • ENJOY!

Notes

This recipes makes 8-12 small-medium pancakes (depending on how big you make them, smaller cakes cook faster). We're able to feed our family of four one breakfast meal with this recipe. Double if you please, store in fridge or freeze.

You can also substitute the pear sauce/applesauce for 1/4 cup yogurt or milk, 1 Tbsp raw honey and desired spices (vanilla, cinnamon) if you choose.

It’s been a long time since I’ve indulged in a “for fun”  book let alone a trilogy, these days it’s all about homeschooling, spirituality, family or food related books. Of course I’d heard of Suzanne Collins best sellers but really wasn’t interested in doing the Twilight hype all over again. However at Christmas my mom and sister convinced me… after all my little sis loved them so did mom and three of my sister in laws were trading the books back-and-forth. I found myself bored and  waiting for my sister-in-law at my moms house and happen to grab the first book of moms bookshelf… I was interested, intrigued and enjoying the quick reads. I really enjoyed the authors writing style and got sucked in! If you haven’t read these yet they’re a fun quick read-you’ll surely want to read all three.

How to Talk to Your Child About Sex- Linda and Richard Eyre

I LOVED this helpful/informative book. I’ve come across several recommendations for the book and am glad I read it. With my daughter turning nine the timing was perfect. This book creates healthy dialogue about sex, something I didn’t have growing up. Check our the Amazon reviews.

I’m SLOWLY making my way through this spiritually loaded book. I picked this book up and am really trying to soak up all of it’s information and apply it personally. As I read I am left uplifted and encouraged.

January Joys…

 A monthly ritual for 2012. Taking a peek into our families life this month. Things we hope to remember and Treasure.

  • Happy New Year, 2012! We rang the New Year at my parents annual hors d’oeuvres party! My big bro and his family were in town from Alaska and my baby sis from Virginia.
  • The Mister and I celebrated 8 years of marriage with an actual DATE NIGHT, thanks to an awesome sister-in-law…dinner (Canyon Crest) and a movie (Mission Impossible)
  • J continues to excel in Piano
  • Participated in our first Azure Standard delivery and we’re pleased as plums
  • Kiddos built their own castles and dinosaurs courtesy of Lowes
  • Finally got Idaho drivers licenses (what an ordeal) and I had to have an eye exam first…Lasik PLEASE!
  • Thanks to a wonderful mother-in-law we took my parents to see the Celtic Nights (kids at sis-in-laws again)
  • We met “Ilene” for the first and most likely last time (my grandparent’s foreign exchange student from 30 years ago) visiting from Ghana, Africa.
  • Several Sunday nights were spent cozy-ing up to a warm fire at Nana & Pops.
  • Attempted to “de-clutter” and sent 8 large boxes/bags to the thrift store.

Sugar considered a TOXIN

I just came across this article titled “Sugar Should Be Regulated As Toxin, Researchers Say” on yahoo news supporting the knowledge that sugar is toxic to our bodies, more specifically added sugar, and should be regulated much like alcohol and tobacco.
